Beef Casserole

  • 1 Kg cubed beef (cheaper cuts like chuck steak are best)
  • 1/2 cup maize flour
  • 1/4 cups chopped onion
  • 1/4 cups chopped celery
  • 1/4 cups chopped carrot
  • 1/4 cups chopped potato
  • 1/4 cups crushed tinned tomato
  •  1 tbsp. garlic
  • 2-3 sprigs thyme
  • 1 bay leaf
  • Salt and pepper to season
  • Oil

 

  1. Place cubed beef into plastic bag with maize flour with pepper & salt for seasoning. Rub beef around in the bag until each cube is coated in flour.
  2. Heat oil in a pan & brown floured meat in batches.
  3. When meat is browned (about 5 min with occasional stirring) add onion, garlic and celery – stir through for another further 5 min until translucent & sautéed.
  4. Place this mixture into your slow cooker.
  5. Add carrots, potato, crushed tomato, thyme, bay leaf, salt and pepper to casserole – stir and cover.
  6. Turn on slow cooker – the longer & slower it cooks the better.

Tips

  • Don’t add any water
  • Make sure vegetables are similar in size.
  • Mix it up with any veggies you like, or try lamb or pork.
  • For a thicker casserole you can use more maize flour, or a gravy powder just before serving.
